The Story
Flaked maize is corn that has been steamed, rolled, and gelatinised, allowing its starches to be readily accessible for conversion to sugar. Flaked maize has no enzymes of its own, which it can use for conversion, so simply add it to your mash vessel with other malted grains to allow conversion of the starch.
Flaked maize is ideal to be added straight to the mash tun for use in American pilsners and cream ales to lighten the colour and body.
